RECIPE: CNY Green Pea Cookies

It is that time of the year where baking and I start seeing each other again. You would usually see me interacting with my oven when I am stressed out or when it is close to Chinese New Year. My favourite cookies to bake for Chinese New Year? Green Pea Cookies!

Chinese New Year is one of the most celebrated festivities in the world. It is to celebrate spring, family reunion and the start of a new year according to the Chinese calendar.

Like every other celebration, you’re always surrounded by good food. And in the case of Chinese New Year, we are always about having good food and snacks for when friends and family come over. But of course, we get to enjoy it too.

I’ve always baked Green Pea Cookies because they’re pretty easy to make. It is a sweet, slightly salty, round bite-sized shape cookie that is common in many homes during the Chinese spring celebration.

Here is my simple recipe for Green Pea Cookies:

Ingredients:

Method:

In a bowl, use a whisk and combine the following dry ingredients:-
-Multi-purpose flour
-Green pea powder
-Icing sugar
-Salt

Once the dry ingredients have been mixed well, add the corn oil and peanut oil and mix until well combined. The consistency of the dough will be similar to very wet sand.

Roll the dough into round bite-sized shapes (about 10-15 grams in weight) and place them on a tray lined with parchment paper.

In a small bowl, whisk an egg and egg wash all the rolled up balls.

Bake in a pre-heated oven (180 degrees C) for about 15 minutes or until the top turns golden brown.

Take the tray out of the oven and let it cool for 5-10 minutes.

Remove the cookies from the tray and allow it to cool down further before storing them in airtight containers.

And you’re all set to enjoy CNY!

Putting it Together:

You can either start snacking on them immediately (like me) or store them in airtight containers. Tape the container up to seal in the freshness and allow for longer storage (2 weeks is my recommended storing period).
